But was this advice sound? Or did we replace a traditional, whole food with an industrial product that created more problems than it solved?

What Is Butter?

Even without trans fats, margarine is fundamentally a highly processed industrial product made from industrially processed oils.

To make oil and water mix into a spreadable product, margarine requires emulsifiers such as:

- Mono- and diglycerides
- Polyglycerol polyricinoleate
While generally recognized as safe in small amounts, emulsifiers are increasingly linked to:

The Case Against Butter (And Why It's Weaker Than You Think)

The conventional wisdom:
- Saturated fat raises LDL cholesterol
- High LDL cholesterol causes heart disease
- Therefore, saturated fat causes heart disease
The reality is more nuanced:
- Saturated fat does raise LDL, but it raises large, fluffy LDL particles (less atherogenic) rather than small, dense LDL particles (more atherogenic)
- Saturated fat also raises HDL (good) cholesterol
- The relationship between LDL cholesterol and heart disease is weaker than once believed, especially for dietary cholesterol
- Inflammation, oxidative stress, and insulin resistance may be more important drivers of heart disease than cholesterol levels

- You want to minimize seed oil consumption

Choose Margarine/Spreads If:
- You're vegan or avoiding all animal products
- You've been specifically advised by a doctor to limit saturated fat (rare nowadays)
- You prefer a product that spreads straight from the fridge
However: If choosing margarine, select carefully:
- Avoid products with partially hydrogenated oils (trans fats)
- Choose brands using rapeseed or olive oil over sunflower or corn oil
- Look for minimal additives
- Consider whether you really need a seed oil product or could use alternatives
Better Alternatives to Both
Depending on your use case, consider:

- Avocado oil: High smoke point, good for cooking, neutral flavor

The advice to replace butter with margarine was based on oversimplified thinking about saturated fat and cholesterol. Decades later, we've learned that the replacement was arguably worse than the original.
If you currently use margarine: Consider switching to real butter, especially grass-fed butter. Use it in moderation, balance it with other healthy fats (olive oil, avocado, nuts, fish), and enjoy the superior taste and nutrition.
If you're vegan: Focus on whole food fats (avocados, nuts, seeds, coconut, olives) rather than margarine. If you need a spread, choose products with minimal processing and ingredients.
If you're concerned about heart health: Focus on the bigger picture—eliminate ultra-processed foods, eat plenty of vegetables, get regular exercise, manage stress, and don't smoke. In this context, moderate butter consumption is unlikely to be problematic.
Moving Forward
The butter vs margarine debate is a microcosm of a larger issue: the replacement of traditional, whole foods with industrial products based on reductionist nutritional thinking.
We isolated one component (saturated fat), decided it was bad, and created an industrial solution. Decades later, we're realizing the solution created new problems.
